Pepper, tomato and goat cheese wrap


I am back home for Christmas and I am enjoying the all the free time again and the nice kitchen. Between all of the Christmas baking I was looking for some savoury quick meal to rescue me from all the sugar and flour. I found this recipe from Amuse Your Bouche and I loved it. It does take  a long time but most of it doesn’t require any supervision besides an occasional stir. And the absolutely perfect the caramelised peppers and onions are complemented by the fresh goat cheese and sour cream. I can eat goat cheese with anything but if you are not such a big fan can change the sour cream goat cheese ratio for the same creaminess without so much cheese.

This is one of those lazy morning breakfast recipes, exactly what I need for the last three weeks of my holidays. I know three weeks sounds like a lot but when you compared it to the 4 months that my holidays last it is actually not a lot :) Sorry boasting about my student life is over now. It is absolutely boiling here in Prague, I don’t think it has been this hot ever before. So I am just lying on the sofa trying not to move too much.  And I am eating gazpacho. This cold refreshing gazpacho is exactly right for these moments. This recipe is perfect, it doesn’t take very long and no heat is required. And it is CHILLED, what’s not to love, right?

Pico de Gallo

finalAnd the sun is gone again from Durham, so everyone has gone back to doing house/dinner parties rather than staying outside and one of my friends decided to host a Mexican themed night with fajitas, nachos and some tequila. I volunteered to bring the dips – guacamole and pico de gallo. The guacamole recipe will appear here later but today it is the pico de gallo that I am writing about.
